Trying to find a cooking apple in the land of Apple Pie

Impossible!

I’ve looked everywhere, it was suggested in one supermarket that I used Granny Smith or even Braeburn (?!). Now whilst both these are delicious to eat raw they can hardly do 40 minutes in a 200C oven and come out fighting. I don’t want a sweet mush in my crumble. I need a proper cooking apple, a crisp, tart, beast of an apple, the sort of apple which will leave your mouth bleeding if you were foolishly enough to try to take a bite of it raw.
